Chocolate Peanut Butter Rice Crispy Treats

Ingredients
Rice Crispy Treats:
- ½ cup unsalted butter
- 1 cup honey *
- 1 cup peanut butter (creamy or crunchy)*
- 1 teaspoon vanilla extract
- ¼ teaspoon kosher salt (optional; use if your peanut butter does not contain salt)
- 6 cups crispy rice cereal
Chocolate Topping:
- 10 ounces semi-sweet chocolate chips (about 1⅔ cups)
- 2 tablespoons unsalted butter (softened to room temperature)

Instructions
- Prepare the baking dish: grease a 9-inch by 13-inch baking dish with butter. Set aside.
- Melt the butter and honey: in a large saucepan over medium heat, combine the butter and honey. Stir continuously with a heat resistant spoon until the mixture comes to a gentle boil and the butter is completely melted.
- Add the peanut butter and vanilla: remove the saucepan from the heat. Stir in the peanut butter until it is fully combined and smooth. Then stir in the vanilla extract. If your peanut butter does not contain salt, you can stir it in at this time.
- Add the cereal: add the crispy rice cereal to the peanut butter mixture. Stir gently until the cereal is evenly coated.
- Transfer the cereal mixture to the baking dish: carefully transfer the cereal mixture into the prepared baking dish. Use a spatula to firmly press it evenly into the dish.
- Make the chocolate topping: place the chocolate chips in a microwave safe bowl. Microwave covered in 15 second intervals, stirring after each interval until melted and smooth. Or you can melt the chocolate in a double boiler over a pot of simmering water, stirring until melted. Once the chocolate is done melting, stir in the 2 tablespoons of butter until fully melted and combined.
- Pour the chocolate on top: pour the melted chocolate over the pan of rice crispy treats, spreading it evenly with a spatula.
- Chill and serve: allow the treats to cool to room temperature. Then refrigerate for 1 hour to set. Cut into even squares and serve. Enjoy!

Notes
- Honey: You can substitute the honey with maple syrup. The treats may be a bit softer and less crisp since maple syrup is thinner than honey. Please keep in mind that honey should not be given to infants under the age of 12 months.
- Peanut butter: this can be substituted with a different nut butter. Cashew or almond butter would be delicious.
- Garnish the top: sprinkle coarse sea salt, shredded coconut, or chopped nuts onto the chocolate topping for a hint of crunch. Chopped pecans, walnuts, or air fryer roasted peanuts would be delicious!
- Equipment: a 9-inch by 13-inch baking pan.
- Storage: the rice crispy treats can be stored in an airtight container in the refrigerator for up to one week or in the freezer for up to 3 months. If freezing stacked, place parchment paper between each layer to prevent sticking. Thaw in the refrigerator before enjoying.
